please disregard my previous post.
i was feeling sorry for my self for about 20 minutes today,
and i snapped out of it and realized how lucky i am.
my life is not perfect, and oh how i wish it was, or i wish i was.
BUT
i have an amazing family.
i love my friends.
i go to the greatest college i could ever dream of.
i have great things going for me.
and i have the sweetest husband who lets me have girl dinners
and leave him to dig for dinner all by his lonesome on tuesday nights.
and i came home tonight to this:
a perfect red rose, just like the one from our very first date (it's now dried and place on our bookshelf in our living room).
it fit perfectly into our Tiffany & Co. vase (a wedding gift), our baby tiff's first use!
and a sweet little poem. my husband rocks.
on another note:
here is your fall treat # 10: Pumpkin Chocolate Chip Cookies adapted from dana-made-it.
as if you hadn't had enough pumpkin from me or anyone else in the baking/blogging world.
here is another recipe thrown your way.
and i know pumpkin cookies all seem the same,
but i am promising you, you will LOVE these.
they are soft, gooey, chewy, and simply divine.
Pumpkin Chocolate Chip Cookies:
½ cup shortening
1 cup sugar
1 cup pumpkin puree
1 tsp vanilla extract
2 cups flour
¼ tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1 ½ cups chocolate chips
1 cup sugar
1 cup pumpkin puree
1 tsp vanilla extract
2 cups flour
¼ tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1 ½ cups chocolate chips
cream your sugar and shortening. Once blended, add your pumpkin and vanilla and blend togetger.
stir together dry ing. in a separate bowl, then mix pumpkin mixture with dry ingredients.
add your chocolate chips and drop your cookie dough onto greased cookie sheets.
bake at 350 degrees for 13-15 minutes, and let cool on sheet before transferring to cooling rack.
if you want to be an over-achiever (that is never a bad thing):
FROSTING:
4 oz cream cheese (half a package)
1/4 cup butter
1/2 lb powdered sugar
1/2 tsp vanilla
pinch of salt
1/2 lb powdered sugar
1/2 tsp vanilla
pinch of salt
mix together and plop a dollop onto each cookie and enjoy!
i didn't make the frosting and the cookies were heavenly.
