fall treats #8: sugar, spice, and everything nice cupcakes

i'm going to admit:
i am a little bit of a baking/cooking snob.
i don't tend to enjoy things out of a box.
i grew up on mostly everything made from scratch.
tubbed frosting is too sweet for me...
of course- i will eat it though. any treat is simply- a treat right?

well i went outside the box (or should i say out of the box) friday morning and made these delicious cupcakes from picky-palate (my new favorite blog).

they were only half out of the box so it still counts as "from scratch." or at least i'm telling myself that.
these are so festive and fun and put you in the harvest mood. enjoy!

Yummy Fall Cupcakes by Picky-Palate


1 box spice cake mix
1 small box vanilla instant pudding mix
4 eggs
1/2 Cup oil
1/2 Cup water
1/2 Cup sour cream
4 oz softened cream cheese
1 teaspoon cinnamon
1. Preheat oven to 350 degrees F. Place all ingredients into stand or electric mixer and beat on medium for close to 2 minutes, batter will be thick. Scoop or spoon batter into 24 cupcake cups and bake for 18-21 minutes or until toothpick comes out clean from center.
Frosting
1 tub of Pillsbury Vanilla Frosting
4 oz softened cream cheese
1/2 teaspoon cinnamon, plus more to sprinkle on top
1. Mix until well combined and spread over cooled cupcakes. Sprinkle additional cinnamon lightly over frosted cupcakes.
