feta, spinach & sun-dried tomato turkey sliders

happy friday!
being a sickly little lady earlier this week the dinners i have made this week
have been mediocre at best. 
but since i am better and lively once again,
last night i made
feta & sun-dried tomato turkey sliders.
okay maybe i'm just a feta freak but doesn't that sound amazing?!
and it was.
seriously. the best thing i've ever made.
i adapted the recipe from picky-palate
and have been waiting all day to share them with you!
not only are they healthy (i paired them with wheat rolls and a salad to boost the healthy factor), but they are easy and fun.
i think they could make a great appetizer or party plate as well.

Feta, Spinach, & Sun-dried Tomato Turkey Sliders
with sun-dried tomato mayonnaise
what you need:
1 lb. ground turkey
1/2 cup crumbled feta cheese
1/4 cup chopped sun-dried tomatoes (jarred in olive oil)
1/2 cup chopped fresh spinach leaves
pinch of coarse salt, pepper, and garlic salt
12 baby burger buns (i used small wheat dinner rolls)
1 1/2 c. fresh spinach leaves (to put on buns)
for the mayonnaise:
1 c. mayonnaise
2 tbsp. chopped and drained sun-dried tomatoes

directions:
  • heat oil in a large grill pan (or skillet) over medium heat. place turkey, feta, chopped spinach, chopped tomatoes, and seasonings into a large mixing bowl. mix until combined. form 12 small patties (1/4 c. size) and place onto a cookie sheet. once formed, place batches into your hot skillet and cook 4-5 minutes on each side until cooked through.
  • place mayonnaise and tomatoes into a small mixing bowl. mix until combined. spread mayonnaise on inside of warm rolls (i put my rolls into the oven on broil for two minutes to make them crispy!). layer bottom roll with spinach and turkey patty. close and enjoy!
