okay i think we hit the jackpot here...
remember that time when i said i couldn't get enough of citrus?
well i lied.
well... i didn't lie i guess, but i changed my mind.
summer citrus might be great, but chocolate will always be my first love.
and chocolate and peanut butter?
you might as well send us on a honeymoon.
i wanted to cry with joy when i bit into my first bite of this cupcake.
and mind you, it's part cake-mix, so it must really be special for me to like it.

i have to admit to you: peanut butter cupcakes sound dry. peanut butter muffins? okay great. but i have never been a fan of peanut butter cupcakes.
until now.
a bite of these cupcakes is like licking peanut butter off the spoon. yeah i said it.
that good.
moist, velvety cake with a distinct peanut butter flavor, filled with a delicious Reese's peanut butter cup, topped with rich, fluffy, chocolate frosting.
and that's the way the cupcake crumbles.

Peanut Butter Cup-Stuffed Peanut Butter Cupcakes
with Chocolate Frosting

For the Cupcakes:
1 White cake mix
3 eggs
1 c. sour cream
3/4 c. creamy peanut butter
1/4 c. vegetable oil
1 tsp. vanilla
18-24 unwrapped miniature Reese's peanut butter cups
Preheat oven to 350 degrees and line muffin tins with cupcake liners.
in a large bowl, combine above ingredients besides the peanut butter cups and beat with an electric mixer for 2-3 minutes.
Fill each muffin tin 1/2 full with batter. push a peanut butter cup into the batter of each tin. cover with another spoonful of batter until the tin is about 3/4 full.
bake for 18-22 minutes until tops are golden.
allow to cupcakes to cool completely.
For the Frosting:
1/4 c. melted butter
3 tbsp. unsweetened cocoa powder
4 c. powdered sugar
1/2 tsp. vanilla
3 tbsp. evaporated milk (or regular milk)
Combine all ingredients in an electric mixer and beat until light and fluffy.
