zucchini brownies, fall treats #3

zucchini. not my favorite vegetable.
in dessert? surprisingly scrumptious.
my sister-in-law laura gave us a HUGE zucchini and i've been waiting to do something with it.
so today after school i had some time to kill and decided to make zucchini brownies.
ummmm YUM!
they were so moist and thick and delicious.
try it:
NO-EGG ZUCCHINI BROWNIES
2 c. shredded zucchini (i used about 1 1/2)
1 1/4 c. sugar
1 1/4 tsp. baking soda
1/2 c. vegetable oil
2 c. flour
1 tsp. salt
1/2 c. cocoa
my add ins that gave it the extra goodness: 1 tsp. nutmeg & 1 tsp. cinnamon
2 tsp. vanilla
1/2 cup nuts (i used semi-sweet chocolate chips instead- i didn't have nuts and i'm a chocolate freak but you could use either or BOTH)
Sift dry ingredients together. Add zucchini and oil to dry mixture, then vanilla. Fold in nuts/chips. Stir. Batter is THICK. Spread in 8x8 (for thicker) or 9x13 greased (lightly) pan. Bake at 350 degrees for 18 to 20 minutes.


i also had an impulse buy tonight. on my way home from the grocery store i stopped at bed bath & beyond to pick up a towel (that i ended up forgetting...) and decided that i HAD to get some fixings for my table to make it festive... luckily we have lots of gift cards at BBB and it didnt cost me a dime. i am so pleased! i love the table runner, and especially the pine cone napkin holders.
