fall treats #5: pumpkin squares

i took this picture two falls ago on harvard campus in boston
it makes me miss home and fall on the east coast
what makes you think of home?

in high school, we had homeroom in between 2nd and 3rd period everyday. homerooms were 10 minutes long and was split up alphabetically.
maureen (my little best friend from high school) and i sat next to each other our junior and senior years in homeroom.
every fall she would bring in the Dever Family Pumpkin Squares
to share with me.
they. are. amazing.
we started being pen pals (how cliche and yet so great) when i got married and for october she sent me her family recipe for the famous p.squares! thanks moe, you are actually the best.
and now i am here to share them with you

Dever Family Pumpkin Squares:
4 eggs
1 & 2/3 c. sugar
1 c. veg oil
15 oz can pumpkin
2 c. flour
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
1 tsp baking soda
preheat oven to 350 degrees. in your mixer, combine eggs, sugar, oil, and pumpkin until fluffy. in separate bowl stir together dry ingredients. add dry ingredients to pumpkin mixture and mix at low speed until batter is smooth. fold in 1-2 cups of your favorite chocolate chips. spread batter in 9x13 pan. bake for 30 minutes
frosting:
1 8 oz. pkg cream cheese
1 stick softened butter
2 c. confectioners sugar
1 tsp. vanilla
mix cream cheese and butter until smooth. add remaining ingredients and mix at low speed until frosting is smooth.
spread on cooled pumpkin bars. sprinkle with your favorite fall/halloween sprinkles.
